I grew up near to the Amish and Mennonites and remember dinners of tomato slices, cantaloupe, and sliced bread as well. A summer feast. I tried to pull this off as a mom; it didn’t go so well with my meat loving husband. 😅

Yes, Briana, when you've got meat-lovers in your midst, meals like this aren't always an easy sell!

I have many fond memories of chicken noodle soup as well, and although I remember it the way my grandma made it, I definitely like your twist. I am not opposed to soy curls, but I have a hard time finding them in most grocery stores. I tend to sub out chickpeas instead for some added texture.

Matt, I like chickpeas as a substitute as well. And I agree about the difficulty in finding soy curls. I've only ever gotten them online, but I wonder if a shop like Lemon Street Market might carry them. Next time I'm in there, I'll look for them and let you know if I have any success.

As I sip my coffee and read your story, I feel my soul settling, comforted somehow by your experiences and images of home, simplicity, and family love you bring to mind. Also, I loved seeing you and your mom work together on the granola last week; she truly seems like a fun and remarkable woman. Your posts are quickly becoming a favorite part of my week. Thank you for this respite--and for your recipes!
