I have many fond memories of chicken noodle soup as well, and although I remember it the way my grandma made it, I definitely like your twist. I am not opposed to soy curls, but I have a hard time finding them in most grocery stores. I tend to sub out chickpeas instead for some added texture.
Matt, I like chickpeas as a substitute as well. And I agree about the difficulty in finding soy curls. I've only ever gotten them online, but I wonder if a shop like Lemon Street Market might carry them. Next time I'm in there, I'll look for them and let you know if I have any success.
